Things to Know About Sour Winter Gose

Sour Winter Gose is the coolest of our four-part seasonal Gose Series. Appearing on tap and on store shelves during the coldest months of the year!

Terroir Fermentation

Like the other Goses we brew, this ale has undergone spontaneous primary fermentation with native microbes found in the air in La Crosse, Wisconsin. This natural, terroir fermentation doesn’t just create an inviting sourness, but also connects this beer to our land and our community. The brisk tangy backbone is a lot like the brisk Winter air around here.

Fresh Spruce Tips 

Our friends Jackie and Pat, who have made Alaska their home, are a big part of this beer. Every year, after the warm Spring sun has broken up the Winter frost, they hike out into the spruce forests of the Alaskan frontier.  Amidst the bears, elk and moose who roam the mountainside, they hand pick the lemony fresh, new-growth tips of the spruce trees. This last year, they had some additional help from their new son who was born over the Winter.

They pack the fresh Spruce tips in coolers and bring them down to La Crosse when they come for a visit. These are the spruce tips that give Sour Winter Gose it’s citrusy nose and golden green hue.

Essential oil pressed from the skins of the rare Italian Bergamot orange bring a bright and juicy aroma. Bergamot oranges are pretty much inedible because they are so tart, but the essential oil, found just below the surface of the skin is prized for its culinary uses. Best known as the aromatics found in Earl Grey teas around the world, the Bergamot orange zest compliments this beer nicely.
